Read your bake: level, moisture, and crumb before you decorate

Before you reach for a scrap of buttercream, spend sixty seconds reading the cake in front of you. It’s the habit that separates bakers who fight their cakes from bakers whose cakes just seem to behave. No amount of beautiful frosting can rescue a cake that came out of the oven wrong, so we check three things first: is it level, is it moist, and is the crumb sound enough to build on.

1. Level: the foundation everything sits on

Set the cooled cake on the counter and look at it from the side, at eye level. Most cakes come out with a dome in the middle, and that dome is the enemy of a straight cake: stack a domed layer and everything above it tilts and slides. The fix is simple: once fully cool, slice the dome off flat with a long serrated knife or a leveler so you have a flat, even disc. Flat layers are the whole reason a finished cake looks straight; skip this and nothing above it can be clean.

2. Moisture: will it still be soft on the day?

Press the top gently with a fingertip. A good bake springs back and feels tender; if it feels dry, dense, or crumbles at the edge, it will only get drier by the time it’s served. A dry cake isn’t a decorating problem, it’s a recipe-and-bake problem: usually over-baking or over-mixing. For cakes that need to last to an event, a light brush of simple syrup on each layer keeps the crumb soft for days (we cover the syrup soak later). Read the moisture now so you’re not apologizing for a dry slice later.

3. Crumb: is it sturdy enough to stack?

Look at a cut edge. You want an even, close crumb that holds together when you lift a layer: sturdy enough to carry filling and the weight of tiers above it. A crumb full of big tunnels and holes (usually from over-mixing or too much raising agent) is fragile and tears when you fill it. A cake that’s too delicate to handle is telling you to fix the recipe before you decorate, not to frost around the problem.

What to watch for

The most common trap is decorating too soon. A warm cake tears, melts your buttercream, and slides. Let layers cool completely, ideally chill them until firm, before you level, fill, or coat. Reading your bake also means reading its temperature: cold, firm layers are far easier to build clean than warm, soft ones.

Before the next bake: match the batter to the tin

Two of the faults you’ve just learned to read start in the same place. A layer that comes out thin and dry, and a batter that domes and spills over the rim, are usually a recipe written for one tin and poured into another. So when an order needs a bigger version of a cake you already trust, scale it by area rather than by eye.

Area 50.3 sq in to 78.5 sq in, and the factor is the new area divided by the old.

Cake tins hold batter by area, so going from an 8 inch round to a 10 inch is not a quarter more batter, it is just over half as much again.

  • Rule of thumb: a wider or deeper tin needs longer at a slightly lower temperature. Test with a skewer, not a timer.
  • The maths assumes both tins are the same depth, which is the usual case. A deeper tin needs proportionally more again.
